Whole kabeljou, gutted and scaled.
Prepare a bed of onions, tomatoes and mushrooms in a boat of Al foil. Add 1/2 cup of wine and sprinkle liberally with fish spice and herbs. Place fish in Al boat.
Stuff belly cavity with Emma's Dried Apple and Roast Vegetable Chutney.
Cover fish with more onions, tomatoes and mushrooms. Sprinkle with fish spice.
Wrap Al foil around fish and seal by folding over edges tightly. Braai over moderate coals for about an hour (I used a gas barbeque at 150°C).
After an hour, the fish should be cooked well enough to flake off the bone.
