Whole kabeljou, gutted and scaled.

Prepare a bed of onions, tomatoes and mushrooms in a boat of Al foil. Add 1/2 cup of wine and sprinkle liberally with fish spice and herbs. Place fish in Al boat.

Stuff belly cavity with Emma's Dried Apple and Roast Vegetable Chutney.

Wrap Al foil around fish and seal by folding over edges tightly. Braai over moderate coals for about an hour (I used a gas barbeque at 150°C).
