Cook half an onion in about a tablespoon of olive oil for about 20 seconds in the microwave (until onion is soft).

1½ cups of red wine
½ cup of chopped tomatoes
1 teaspoon tomato paste
1 tablespoon Emma's Apricot, Almond and Brandy Chutney

I also added 2 tsp Emma's Red Pepper & Chilli Sauce, a dash of Worcestershire Sauce and a dash of Soy Sauce

Heat the mixture for about 10 minutes on low power in the microwave. Stir regularly.
Add:

Sprinkle some mustard seeds and mixed herbs on the leg.

Allow to marinade for another hour.
