A very quick recipe made with leftovers :)
Brown onions with mushrooms (leftover tinned mushrooms).
Start cooking pasta of choice.
Add chopped tomatoes (leftovers) with a pinch of coriander and a pinch of ginger.
Add 1/2 cup of red wine. Leftover Emma's Dried Apple and Roast Vegetable Chutney as well as leftover Emma's Cashew Nut & Coriander Mousse also added
Chop whatever leftover meat is available into bite sized chunks - here, braaied chicken and boerewors.
Mix well and simmer for a couple of minutes.
Add cooked noodles - in this small elbows - and mix well. Simmer for a further couple of minutes.

Note 1: Pat thought this was a bit rich - maybe mix a bit of white wine with the red.
Note 2: Slightly larger pasta could work better with this particular dish.
